Honest laughter, not just humoring the teacher kind. 😃

Most of us fessed up to being bread sticks - me included - at the beginning of the class. By the end we are all more pretzel like. Amazing what an hour of focused breathing and a slow flowing yoga sequence can do for a stiff bread stick of a body. Your quote is a really good analogy.

to me that humour has somewhat the same effect on our minds . . .relaxes the mental stiffness.

Anyway, have a very relaxed, pretzel kind of a day.

Pretzels are bathed in a weak lye solution to elevate the pH of the surface. Flour is naturally acidic.
This greatly accelerates the Maillard reactions that occur between reducing sugars (glucose & maltose) & amino acids.
This is what creates that nice carmel brown color. The reaction is a few orders of magnitude slower for breadsticks at a pH of 6.5. Breadsticks have a golden color crust, unlike pretzels.
