Rich and Hearty Spinach Beet Barley Soup Recipe (video)

This one was an experiment that came out extremely well. We love beets, and we love spinach, and we've been trying to eat a lot more soup for health reasons. This soup is very hearty and has some great flavours. If you make it with a nice dark vegetable stock or even a mushroom stock. The toasted barley actually gives the impression of ground beef or something, texture-wise, but all in all it's just really delicious. The way we make the soup is more like a soup concentrate, and we dilute it about 1:1 with either water or stock before serving. If you wanted, you could even put these through the canning process and they'd be shelf stable for a while. We find we don't have to do that, because we go through it fast enough.

You could replace the spinach with any number of other leafy greens. Kale, chard, or even radish greens would be awesome additions (we know because we've tried them) to this soup. We garnished it with a little bit of yogurt, but you could use crème fraîche or sour cream as well if that's what you have on hand.
